Abstract : In this research estimate the quantitative and qualitative distribution of yeasts in some fruits and food markets, Jeddah, Saudi Arabia, was also clarified morphological characteristics of yeasts isolated physiological as well as its activity is vital. And studied also affected growth and standards of the yeast heat and the degree exponent Hindrugeni and sources of carbon, nitrogen, and the results showed that the density of yeast vary according the type of fruit or food-dependent so the degree of pH and sugar content, have found yeast fermented fruits such as grapes, figs, cherries, apricots, while found yeast oxidized in pickles, followed by yeasts predominant yeast Alskaromitis, Cervia, Hansenyola Onumala, and Hansnaa Spora, and Hansnaa Spora, Candida Trubikales, and Alrodotoriola, has shown this yeast are clear differences in the efficiency in the analysis of sugars different, it has grown at a wide range of temperatures (15 - 40 m), and pH (3-8), and had a yeast Alskaromitis Cervia (s15) the ability to take advantage of high glucose as the sole source of carbon compared to other carbon sources, where the constant focus Ks = 0.144 mmol / 100 ml Explained the findings from this research that the yeast of the micro-organisms are widespread on many of the foodstuffs covered by the rights, and stop the numbers and types of yeasts according to the type of food, nature and content of sugars. Concluded from this research that the yeast according to the type of food, nature and content of sugars. Concluded from this research that the yeast fermented and oxidized at different rates found on fruits and some of the food tested, and increases Maxdath brewers sugar in fruits with high sugar content such as grapes, mangoes, apricots, and others. So, care must be taken with fresh fruit, especially citrus and traded them gently and stored at low temperatures, so that prevents or reduces the activity of these enzymes that lead to the corruption of these fruits in a short period.
